Eggnog
Make a double batch of vanilla pudding.
Heat:
2 cups of milk over low heat to scald.
Mix:
3/4 cups sugar
1/8 tsp salt
1/3 cup flour
2 egg yolks
1 T vanilla
2 T milk
Slowly, slowly (so you don’t cook the eggs) add the hot milk to the mixture. Whisk together and then carefully pour the mixture back into the pan. Heat over medium heat—slowly constantly stirring with a wooden spoon until mixture bubbles. (Make sure you stir all over the pan. If you don’t, it will scorch on the bottom and will taste burned.) Let cool.
Add 1 quart of milk and lots of freshly grated nutmeg. Beat egg whites very stiff and sweeten them with about 1/3 cup granulated sugar. Fold the sweetened egg whites into the pudding/milk mixture. Add 1-2 T vanilla, more nutmeg, and more milk (if needed to make it "pourable"). Chill thoroughly. Top with freshly grated nutmeg to serve.
This is my all-time favorite Christmas treat. It's not Christmas if we don't have home-made eggnog. As much as I enjoy bourbon, I never put any alcohol in this eggnog. Don't know why. Cheers!
