Vanilla Pudding (and Much More!)
Heat:
2 cups of milk over low heat to scald.
Mix:
3/4 cups sugar
1/8 tsp salt
1/3 cup flour
2 egg yolks
1 T vanilla
2 T milk
Slowly, slowly (so you don’t cook the eggs) add the hot milk to the mixture. Whisk together and then carefully pour the mixture back into the pan. Heat over medium heat—slowly constantly stirring with a wooden spoon until mixture bubbles. (Make sure you stir all over the pan. If you don’t, it will scorch on the bottom and will taste burned.) Let cool.
You can use this as the base for eggnog, banana pudding, filling for a layer cake, banana pie, or coconut pie.
